Allergen Management

No food business wants to get allergen management wrong especially when the consequences of failure in allergen control may lead to significant injury or death in allergen sensitive individuals

Carrying out an allergen risk assessment assists food business in thoroughly reviewing the  allergen status of the ingredients and the processing conditions that contribute towards the  allergen status of the finished product.

Food allergens may be present in a food due to  intentional inclusion as part of a recipe but may also be present due to unintentional cross  contact. This can occur at any point in the process.
